Thank you for all your suggestions, I dug around last night looking at the options you all had suggested and found that PaidmembershipsPro has a mailchimp integration plugin.

Late to the discussion, and it seems like some good off the shelf stuff has been suggested, but if you do find yourself rolling your own I'd suggest Formidable Pro (I see Mike already suggested Gravity). Formidable has add-ons for registration, PayPal and MailChimp, although I've not yet had a use for the latter two. Not too steep a learning curve (goes without saying if I can use it!), and great support.
