Hi Linda
I have done a lot of audio recording of oral history etc. For simple 'snaphot' recording the onboard Voice Recorder app is fine, or something like BlueFire, but for more sophisticated features, editing and processing Garageband for iOS is excellent.
Dragon Dictation is a good choice for speech-to-text, or you could try YouTube's machine transcription service.
