We will soon release "surfmaths", which works like fslmaths but on surfaces.
In the meantime, I am afraid you will have to hack it somehow. For example, you can use matlab to read the ascii files and add them up.
I'm attaching two matlab functions that can read/write surface files created by probtrackx2. Hope this helps.
