There are no button pressing options in SPM for generating Jacobian
fields, although there will be this ability in SPM12. SPM12 is
currently at the beta stage of development, and we hope to do a proper
release once most of the bugs are ironed out.
You won't be able to generate flow fields from sn.mat files. Probably
the easiest way, which will require a tiny bit of coding would be to
write out the deformation field as a y_*.nii file. You could then use
the (undocumented) toolbox/HDW/spm_def2det function to compute
Jacobian determinants.
