Hi Alex
Our service JISC Digital Media has written a lot about scanners and below
are a few links to get you started.
http://www.jiscdigitalmedia.ac.uk/stillimages/advice/scanners/
http://www.jiscdigitalmedia.ac.uk/tags/category/scanning
http://www.jiscdigitalmedia.ac.uk/stillimages/advice/the-book-scanner
It is also worth ironing out the 'i have been asked to look at flatbeds' as
if there is a proper reason then ok BUT if it is because of personal
preference etc then this may hinder your project without real justification.
If I can be of further help please get in touch
Zak
