you should also check out NCBE, National Centre for Biotechnology
Education at the University of Reading: www.ncbe.reading.ac.uk
(disclaimer: I happen to work there since not long ago). They have
massive experience in developing and delivering practical materials
for schools (mostly in the biosciences).
