Twelve million Americans, the majority of them children, suffer from food
allergies. And every year, nearly 30,000 people go to the emergency room
to be treated for serious food-allergy reactions.

Symptoms of an allergic reaction to food can include itching, skin rash,
stuffy nose and wheezing. A severe allergic reaction to food, called
anaphylaxis, may also include swelling of the throat and airway, shock and
loss of consciousness, and it can be fatal.

There are no "cures" for food allergies and, in fact, the only treatment
is to completely avoid consuming the allergen.

The U.S. government requires food manufacturers to list food allergens as
ingredients in their products. The eight major food allergens in the U.S.
are milk, eggs, soy, wheat, peanuts, tree nuts, fish and shellfish.

Because some allergens can cause an allergic reaction even when just a
trace amount is consumed, contamination of allergen-free foods by common
allergens during the manufacturing process may pose a risk for those with
serious allergies.

A rise in recent years in the incidence of such allergies has resulted in
an increased availability of allergen-free foods. To meet growing demands,
there has been a surge in the availability at mainstream grocers of milk
alternatives (coconut milk, rice milk, hemp milk and many other dairy-free
options) as well as wheat- and gluten-free breads, pastas, cake mixes and
snacks. In addition, food makers are highlighting their products that do
not contain allergens by labeling them accordingly as soy-free, dairy-free
or wheat-free.

Young children with food allergies must be trained how to avoid foods
containing allergy-producing ingredients and even, if necessary, how to
self-administer an epinephrine shot, which is used to slow or stop an
allergic reaction.
