There is no bash script, dtifit is a C++ compiled binary. You can find the code in $FSLDIR/src/fdt/dtifit.cc.
The default operation for dtifit is fitting the tensor model to the log of the data using Linear Least Squares. Then, it diagonalizes the estimated tensor and computes the FA, MD, etc. See Basser,1994 first DTI papers for an explanation of the model.
