For the segmentation, this would generally involve trying a few
different settings for the regularisation to see what seems to work
best. The default settings seem to be OK for most scans, but
sometimes cleaner results can be obtained by changing them.
You can save the estimated bias field from the segmentation, which
gives you something that could be quantified, perhaps by looking at
the maximum and minimum values within the region of the brain.
