Just had a play with this and I like it but I see the problem in trying to get a bigger set of tables in there.
I used to do lots of fun things with interactive Excel spreadsheets (for example using slider bars to change values in a cell and see the impact on the rest of the spreadsheet) and I wondered if it might be worth using the Xerte object to string together such resources?
Example you could use the Xerte object to introduce the theme and then (using the new window navigator template) to load an interactive Excel or PowerPoint up for the student to play with. Later the Xerte slides could have a range of self-assessment activities, starting with simple things like your interactive diagrams but then going on to multichoice quizzes asking questions specifically about the linked Excel spreadsheet.
To me that would get round the problem of limited screen space on Xerte and yet still allow you to make maximum use of the Xerte's key strength which is formative assessment.
The final point about text crispness is related to the size of the image. If you made the image slightly smaller to begin with it wouldn't be squashed to fit the space. See if the attached (which I made by zooming out on your flash paper example then doing a screenshot with fscapture) works any better.

Following on from my question about using xerte (profit and loss
account) and also the Alistair's useful Friday Xerte Training session - I thought I'd share what I came up with.
I made a table in powerpoint and put it into the hotspot template. I showed the full profit and loss account in a flash paper to start with.
I had to divide the profit and loss account into two to fit on screen.
The text in the tables isn't that crisp - so let me know if anyone knows how to improve this.
