Hi Barry
Have you thought about trying using the iPad for text input into (and for controlling) a desktop, using for example something like Mobile Mouse (http://mobilemouse.com/)? It mainly works over wifi but it is easy enough to create an ad hoc network between the iPad and the computer you are trying to use without needing a router. I've had quite a bit of success with some of my clients in a similar situation and this way they then can use any application (e.g. alternative wordprocessor) on the PC.

I'm seeing a couple of students who seem to be able to use the touch
