My thanks to everyone who has responded regarding this issue. It has been very useful to get a feel for other institutions' experiences and to see how this situation has been affecting different people. It is also good to see that ProQuest are aware of the situation and are taking steps to deal with it.
On Friday I did receive a very helpful call from ProQuest's technical support explaining the situation and assuring me that they were working very hard on a resolution.
I should also clarify that the situation with the ProQuest Professional platform is indeed that there is no Shibboleth access and that the plan is it will be launched by October. It turns out that our users cannot actually log in to ERIC, Australian Education Index and British Education Index via Shibboleth at the moment by following the "Log in through your library or institution" link and selecting their region and institution. The confusion arose because, when users do follow this authentication route, they are logged into ProQuest and they reach the generic advanced search page for the main ProQuest platform, from which ERIC is available. Apologies if my reporting that we could access the Professional Platform via Shibboleth has caused any confusion or inconvenience.
So, overall, we're looking forward to hearing further from ProQuest about the resolution of this problem.
