On the topic of USB Audio Adapters.
Two examples are the 'InSync Buddy 6G'
http://www.vocalinks.com/site/vocalinks/assets/pdf/USB6G-1Page.pdf
also see http://www.itspeaking.com/speech-product.asp?prod=92
and the 'Lindy USB 2.0 Audio Adapter'
http://www.lindy.co.uk/usb-2-audio-adapter/42961.html
I have used both of these with Dragon and Windows Vista speech recognition software with the Plantronics Audio 310 headset and can say they both work far better than plugging the microphone into the micropohone socket on our Acer laptop computer.
Incidentally the Plantronics 310 uses a noise cancelling microphone.

Subject: Re: microphone
Hi there
I do a lot of work using speech recognition with people with MND and
have found that while most clients prefer a desktop microphone the
reliability and accuracy of these systems is significantly lower than
using a headset microphone even if there is not much background noise.
I believe this is because of Dragon's sensitivity to changing volume
levels of the person's voice (affected by their position and position
of the mic). The mic provided by AbilityNet's loan bank is a version
of the Buddy Gooseneck
(http://www.emptech.info/product_details.php?ID=1032) with a desk
clamp.
The disadvantage of headsets is that many people are unable to remove
them independently and the wired versions will stop people from being
able to move away from their computer independently as well. I'd be
interested to hear if anyone if having any success with DECT or other
wireless mics.
FYI I have two Plantronics .Audio 310s
(http://www.plantronics.com/uk/product/audio-310&skuId=sku5710011)
which are extremely reliable and straightforward as long as your sound
card is good enough (they're not USB).

I think desktop/array mics will generally suffer in use because of picking up background noises etc. It might be OK just for commands (i.e. a limited vocab) though. USB mics should be better if her computer has a poor sound card as they don't use the computer sound card (AFAIK).

She wondered whether there is one that can be connected through the USB port and whether it can be desk top mounted. Any advice where to buy such an item from?
