I'm not aware of a way of doing this technically but there are some pedagogical workarounds.
Sometimes it’s a question of being creative about the way the question is asked for example on slide 9 of http://xerte5.techdis.palepurple.co.uk/play_8879 I made sure that the wordy part of the task went into the target area and the short bit was in the label. I know this isn't a simple category quiz but sometimes a category style quiz can be reworked in this manner. Generally I'd use categories for simple stuff like dragging words into Noun, Verb, Adjective columns but for much more wordy stuff (eg character descriptions in Shakespeare play) I'd switch to using a M/C quiz template (eg -"Whose character can best be summarised as ...").

I have just started playing with Xerte and loving the simplicity of creating slides, however just wondered if there was a way to change the size of the text boxes (when using categories) and they all seem to take the same size of the biggest box (which seems to take up a lot of space when creating a lot of text boxes).
