Hello Emma,
there certainly are a host of free tools out there for ripping the files
form your optical discs (DVDShrink or Handbrake for instance). But an
important question here is: does the on-disc structure of the DVDs/Blu-rays
have meaning for you (i.e. interaction of specific sequencing of video)? If
so, you'll want to preserve the disc's structure as well as it's video
content.
Similar decision have to made about multi-channel audio (and
foreign-language audio tracks), closed captioning and multiple camera
angles, if you have any of these.
In terms of target file formats you might want to consider: uncompressed or
losslessly compressed formats such as JPEG2000 are the 'holy grail' but
think carefully about the costs of taking your (already compressed) video
and storing it in such a format with no gain in 'quality'. The benefits of
moving to an open format may still make this worthwhile for you though. If
you decide to use JPEG2000 (or similar) you'll almost certainly want to
elect alternate formats for delivery.
If you do decide to use JPEG2000 (or similar) you'll probably want to pull
the media of the disc in its native format (MPEG2/4) and perhaps keep a
copy at this stage, before going on to re-encode as JPEG2000.
