Ha, yes, I've done that once or twice too.
I've turned off autocomplete for now - not sure if the benefits outweigh the
drawbacks of this, but will see how it goes.
Ideal solution is probably to add an 'undo' link to the next page, so that
you can quickly go back and correct a classification.
Allowing users to 'correct' other people's classifications is a bigger task,
and would require a bit more thought.

strictly speaking I think the classification page URLs would have to end in
the tag name for the microformat to work correctly?).

Not yet. Thought it'd be better to get one tag for as many objects as
possible instead. Plus, I reckon most things have a single classification
which adequately describes them. But, I might reconsider.

Haha! Fixed, thanks. The pluralizer doesn't have an exhaustive list of
irregular forms.
