Hi Sarah,
You don't say whether you're wanting to record fruit trees in public spaces or want to involve volunteers with the recording, but if trees in public spaces or parks open to the public, I would suggest asking the local authorities etc how they record their trees and whether they are willing to let you use their data about the fruit trees.
And if you aren't already, I would suggest talking to the Plant Heritage people - http://www.nccpg.com/ - they work with volunteers to record garden plants.
