A bit late coming to this thread, but we've been implementing HTML/Flash/Javascript kiosks for a while. We started in 2006 to deliver digital signage using flash, then extended the idea to the galleries (running everything from a web server which worked out which Flash file to put on computers with static IPs). This allowed us to keep all the content on the web CMS that we built in-house (PHP/MySQL).
More recently we've started to use web pages on touchscreens (some with Javascript libraries for animation) and for digital signage (just div slideshows that cycle through events and exhibitions).
We've used Firefox with a fullscreen plug in, SiteKiosk (Argh!), IE8, and Adobe Air. The problem with the browsers is they don't extend across a dual monitor set-up so we built an Air app for this purpose.

Interesting link - thanks for sharing. It works pretty well for me, even
with the 'additional IE9 graphics' - but then I'm using Safari on a Mac,
wouldn't like to try it on IE 7 or 8 on an old PC.
I guess I was thinking more of text / image / video based interactives for
kiosks, but it's good to see people starting to explore javascript-based
gaming too. Mozilla ran a competition for this recently too:

My general feeling is that for game like interactives, HTML 5 really isn't
quite there yet. The really big issue is going to be whether your visitors
have the right browser to play it. As long as visitors are still using
Windows XP and Internet Explorer this is going to be a problem.
Agree that there's still a way to go - and of course it'll take a while for
people to upgrade their browsers (especially IE, as IE9 won't run on XP I
think?).
Have you (or anyone else) had any experience running kiosks using a
full-screen web browser? I came across

describes how to use a browser called Plainview (based on the webkit
rendering engine) in kiosk mode. There are probably other alternatives - I
spotted a kiosk in a library the other day which was clearly using a full
screen browser (judging from the error message).
