If you want precision, draw semantic networks or other structured
concept maps with formal relationships between objects:
(e.g. Gaspode --Instance of--> Dog)
in something like Cmap Tools (http://cmap.ihmc.us/).
My students did that in the Modelling and Managing Knowledge Projects
(http://mmk.mgt.qub.ac.uk/). Some even did some reasonable semantic web
markup of the pages on their sites.
I see mind maps as a looser tool to use when you aren't quite sure which
are the concepts (nouns) and which are the relationships (verbs) between
them.
The point of getting students to draw out knowledge is to ram home the
fact that knowledge is messy. If they are ever to deal with real-world
evidence, it won't be laid out in linear format like in a textbook.
