If you look at the Mendip Cave Registry and Archive

there is info about copper mining in Mendip. The search engine is not too
easy to use, but if you go to

and enter copper in the title box, 14 references are found. some of these
are in the Quantocks and several are about surface streams. However "The
lead-copper minerals from the Mendip Hills" by Spencer, LJ published in 1923
in Mineral Magazine issue 20 pages 67 to 92 sounds very promising.
In the "Indusrtial Archaeology of the Bristol Region" by Angus Buchanan and
Neil Cossins pub 1969 David & Charles, there are several references to
copper in the index. There are 12 pages about copper, zinc and brass. There
was a copper mill at Swineford, mot Mendip, but not far away
"Bristol in the 18th Century" edited by PAtrick McGrath pub 1972 by David &
Charles has a few references to coppper in the index.
Hope these references help. The last two do not have details of specific
mines, more just a general history. A lot of the copper ore processed in the
Bristol area was mined in Cornwall and other places.
