The symmetric tracking option runs the tractography twice, each time considering one the masks as a seed and the other as a waypoint, then the final result is the sum of the two. You cannot use them as termination masks in this mode - instead you should run probtrackx twice, selecting one of your masks as a seed and the other as both a waypoint and a termination mask, then add both results.
