I have a couple of suggestions:
with photoshop you can actually turn off the ruler view (under view,
click off the 'tick') and also switch to viewing just what is appearing
on your canvas using the icons at the bottom of the toolbar (full screen
view without menu). This still leaves you with an upper menu bar however
but at least conceals all the rest of the things on the desktop.
Otherwise you could also experiment with the way you are projecting
images. On the mac there is an option to project from a 'second' screen
so to speak, sorry I don't know the technical term. You could slide your
photoshop canvas to this virtual screen and project from there, choosing
to view the canvas in the entire screen or sizing it to fit the screen.
