I'd also suggest you go with the view that you are actually interviewing them.
Whilst we are in an economic downturn, OH professionals remain few and far
between and so it may be they actually need you more than you need them,
so to speak. Just look at the number of vacancies at recruitment agencies
each week.
I'd always ensure you have some probing questions to put to them, why
should you work for them and what are they going to do for you? Will they
support further training and education etc.
Good practice can be gained from attending interviews that you don't actually
want, that way you relax in the interview as the pressure is off and this like
most thing will improve confidence over time.
