I couldn't agree more, it took me 12 months to get a suitable candidate only for her to turn around a week before starting & say she had 'changed her mind' ok, things happen but a lot of time was wasted. 6 months later we got a better person but that was a long 18 months

Can I add a little plea. Please don't accept a place on an interview if you are intending to attend just for experience as you may be denying another candidate of a place.
I get a little miffed when I am let down by either short listed candidates who don't turn up or those who are not committed to working for me. As OH is a very small world and we all have pretty good memories (well sometimes at least) it will not do you any favours if you don't treat each interview seriously.
Although there is a shortage of good OH nurses, as a recruiter I am very selective and will not appoint a below-par candidate even if it means having to re-advertise.
Glenn has a great point about preparing some probing questions for the interview panel. When this happens to me it helps me decide whether the candidate is really interested in the post and has thought about their personal and professional development.
There are great websites offering practical advice - even youtube may have some short films on preparing for interviews.

I'd also suggest you go with the view that you are actually interviewing them.
Whilst we are in an economic downturn, OH professionals remain few and far between and so it may be they actually need you more than you need them, so to speak. Just look at the number of vacancies at recruitment agencies each week.
I'd always ensure you have some probing questions to put to them, why should you work for them and what are they going to do for you? Will they support further training and education etc.
Good practice can be gained from attending interviews that you don't actually want, that way you relax in the interview as the pressure is off and this like most thing will improve confidence over time.
