I can't say that I know how to do this using fslview itself but I have
used things like this:

In the past to script nigh on anything. Just use something like
imagemagicks import (using the window id) Or you could get all funky
and hairy with X and do something like this:
# get the window ID of fslview
xlsclients -l | some-wierd-grep-perl-awk combination to get the window ID
# get the window using import
import -window 0x2c00001 output.jpg
Of course you will have to insert something else for 0x2c00001
