Having been a teacher of Chinese for a number of years, I agree that there
are not a lot of resources out there for teachers of older students.
When I was teaching High school in Australia, I used the 'Ni Hao' textbook.

It was well-sequenced and very effective with the High school students I
taught. (all were first language learners.)
I hope to have 10 Modules completed for students in Grades 6-8 (US standard)
by November 2008, so maybe you can drop by again and check out the new
materials for older students.
Chinese Monster Magic integrates Reading and Responding, Writing, and Oral
Interaction in each Module, and uses activity based materials focused on a
theme. Being a second language learner myself and teaching in Australia it
is more geared to the UK and Australian type of schooling. (collaboration,
activity based, hands on etc.,)
