What about considering if there is a risk to any individuals who are
immuno-compromised if they are exposed to Campylobacter/Salmonella etc
(depending on the product)?

I would agree with Joseph
As the transmission of HIV is through exchange of bodily fluids, I would
think that the risk of transmission via food would be negligible.
The same hygiene guidelines (according to the Food Hygiene Regulations
i.e. broken skin etc) would apply equally to a HIV positive individual
and someone who was not HIV positive.
In my opinion I would consider that they would be fit to work as a food
handler.

Why was it asked for?
It is my opinion that no specific precautions would be required in this
workplace.
Do they routinely wear gloves in this area?
Obviously if they had open cuts, they would be advised to cover as per
usual advice in food area can't see how this would be different for HIV
Are the workers' hands always visible? if so, I would say no special
precautions
Interesting to see what others think on this
