I'm working for the Capitoline Museums and we decided to use the IPTC standard exclusively. It seemed to us the most widely adopted, and all together most useful approach to the well-known problem. Plus, a lot of software allows you to input/view your data, and you can also - with relatively simple tools - export the metadata as stand-alone XMP files for export into a database.
Right now, we use Adobe Lightroom on Win* machines, and Sagittarius on Linux machines for data-input.
The SubjectCode field is used by us for the inv.number (technically, a URN) and can comprise more than one items. The Title filed contains the image file name. This way, we can connect (inside the database) the scanned images and the represented objects therein.

We have about 10.000 images scanned so far for the main collection, and a lot more for other parts of our museum landscape ...
