Dear Nick,
type 'help sphere' in matlab, or alternatively use this code (which
renders better on top of a triangulated cortical rendering):

With 'patch' you can render the cortical surface as extracted by spm5
using the 'Xtract Surface' function under 'Render'.
You need to be a bit of matlab skills though. I used it in one of the
figures in http://www.ncbi.nlm.nih.gov/pubmed/17699696
