I assume you want to write out the VOI values. The VOI file that spm saves
is a matlab structure that has many different variables, one of which is the
values.
I think SPM also saves the variables to the matlab base workspace so if you
write it out to ascii immediately you can just follow step 2 below.
% 1) load the saved VOI data
load('VOI_filename.mat')
% 2) There should be a variable 'Y' in the workspace.
% save the VOI values in an ascii file
save('my_ascii_filename.txt','Y','-ascii')
% qed
