Backing up with Acronis is easy - create a bootable USB stick with the
Acronis standalone application on it. Go into the BIOS make sure that
USB is a bootable option. Re-boot with USB in and use an external
drive to backup to, or a large SD card.
Windows XP is easy to install providing that you have a USB CD-ROM or
DVD player. Ubuntu should be easy - but leaving this for a future PDP
or retirement! Checkout eeeuser.com for excellen forums and Wiki on
