Although somewhat delayed by other various commitments, you may wish to know that I'm finishing at the moment 'A Guide to Early Printed Books and Manuscripts' for Blackwells, with an emphasis on analytical and historical methodology. It will now be out next year, but is aimed at graduate students and faculty who need an introduction to the primary methods and ideas.

I think we'd all be interested in seeing the list you come up with.
My department has identified Book History and Bibliography as a marketing/curricular emphasis, and in that I teach textual criticism. We've also started a publishing certificate on the graduate level (which we hope will receive final approval from the upper powers that be this fall).
I'm not sure if it would help you but I have a little bit of a list in the introduction to _Teaching bibliography, textual criticism, and book history_ (Pickering & Chatto, 2006).
