I think we'd all be interested in seeing the list you come up with.
My department has identified Book History and Bibliography as a marketing/curricular emphasis, and in that I teach textual criticism. We've also started a publishing certificate on the graduate level (which we hope will receive final approval from the upper powers that be this fall).
I'm not sure if it would help you but I have a little bit of a list in the introduction to _Teaching bibliography, textual criticism, and book history_ (Pickering & Chatto, 2006).

Subject: Textual Studies Departments
Dear Textual Scholars:
For my own department's future planning, I need to compile a list of
departments of Textual Studies/ Humanities Computing, and of those
departments of English that have this as a stated area of expertise. I
am
only concerned with Departments in the US and the UK. I would be very
appreciative if list members could supply me with any information they
have,
either about their own departments or others.
Thank you very much,
Suzanne Gossett
