Does that actually recycle the students out though, keeping the course
structure the same?
When I have used it (as I am right now!), you can either make a mirror
image or one that will bring all of the course info, but into a default
structure?

Sure. There's a command line tool to batch copy courses. You prepare a
text file with all the courses you want to do and set it running! It
takes a lot of effort out of the Summer months.
