I had tried Google Scholar and Google Books, and found a considerable number
of references to individual oil mills or to oil mills in general. One of
the difficulties is that there are many articles on modern oil mills all
over the world, but my interest is limited to the historic industry and in
Britain. I had not tried adding UK to my query: I tried (England or
Britain), but that brought up references in New England too: I obviously
have a lot to learn about constructing queries to produce the desired
result.
Since sending my original message, I have found a description in A. Rees'
Cyclopaedia, and I picked up a reference to a 1960 book on seedcrushing
(which covers the subject), but only got my hands on a copy shortly before
the (reference) library closed. This takes the subject forward somewhat;
but more will be useful.

I know that everyone first tries Google these days but
I wonder if you've tried entering
"oil mills" UK
into Google scholar?
I mention it just in case there's anything useful, but
you may have to refine the search a bit if there are
too many refs.
