179 mmol/L - for the record this is 158g/L or approximately 16%. Single
cream is 18%. Clotted cream is 55% minimum or about 3x concentrated.
However, the protein content of your sample is of course much higher
than clotted cream so the consistency may end up very similar, even if
the fat content is lower.
