If it is only a display issue I would change the colormap.
You can do this by writing the following in the matlab prompt:
cm=gray(64) % The default matlab grayscale colormap with 64 colors
cm(1:3,:)=repmat([1 1 1],[3 1]) % Set the lowest 3 values to white
colormap(cm) % Use the colormap you have just specified
If you are overlaying an activation image in say colormap hot you
would have to use a combination of the two:
colormap([cm;hot(64)]) % Use the cm colormap for the lowes 64 bins
and hot for the rest
The result is attached bellow.
