Creative Commons now makes this type of licence more straightforward and
can use 'human readable' language. You are right that this needs to be
built in at the start!!!

Additionally, where we've been collecting UGC via the website, I've used
the following statement: "In submitting your story, you agree to grant
the Science Museum a non-exclusive, sub-licenseable right and license to
use, reproduce, modify, adapt, publish, translate, create derivative
works from, distribute, perform, play, make available to the public, and
exercise all copyright and publicity rights with respect to your
contribution."
The key thing with copyright for user generated content is that users
should not be expected to sign over their copyright on their content,
which would forbid them from publishing it elsewhere. Instead they
should retain the copyright ownership, but grant you a non-exclusive
licence (so that they can also licence it to other people) to use their
content. If this right is sub-licenseable, then you can reserve the
possibility of syndicating or sharing the content with other websites.
