There is a report on a gallery, the Tate gallery report, the data from
which have been used on several methodological studies.
This report is online replete with detailed observation data:

These data were used for the initial testing of visibility graph
analysis, as well as agent-based techniques. Here are a few papers that

Now, I would strongly advise you follow up Sophia's recommendations
first, as these pertain more to detailed understanding of the issues you
raise (particularly exhibit placement), but for some ideas on
methodology, these others are perhaps worth a look.
