If you want to create a public wiki, try Wikia, which uses the same
software as Wikipedia, but is a commercial enterprise.

Alternatively, for private wikis, try SocialText, which is run by Ross
Mayfield (a fairly influential blogger)

It's pretty straight-forward to install your own version of MediaWiki
(the software behind Wikipedia) though. You need PHP and MySQL, but
otherwise it's an easy install.
