There are lots of versions of Agatha's passio. Two in modern English
that you might consider assigning (should you choose Agatha) are:
Christopher Stace's translation of the version in the _Legenda Aurea_.

(Penguin, 1998), pp. 77-80.
Sheila Delany's translation of Osbern Bokenham's version. See Delany,
tr. and introd., Osbern Bokenham, _A Legend of Holy Women_ (Univ. of
Notre Dame Pr., 1992), pp. 157-66.
A. has a very nice translation story (this explains, incidentally, why
Catania has but one breast relic of A. -- the French knights who
brought her back from Constantinople stopped off at Taranto and left
the other one there). And there's a lovely sequence from the Sicilian
office for her translation feast. But I don't think that either has
been translated into English.
