Every organisation is different, so its hard to come up with any hard and fast formula that works across all organisations.
Why not talk to your IT people? They should have an idea how many messages are currently on your mail system. At the very least, they should know how much space the mail takes up.
Of course, not everything on your mail server will be worthy of inclusion in your ERMS.

Subject: Email as Records
I was wondering whether anyone has produced any metrics on calculating the
number of email records that are created on a regular basis?
I would welcome any ideas as I am trying to come up with a way of
forecasting what the contents of ERM system may look like in the future.
Many thanks
Eleanor
