Speaking of birds, I just did something rather nice to a skinless
chicken leg. Basically a chicken marengo--brown the chicken in butter
and oil, remove, throw in diced shallot, (my innovations) paprika and
a diced jalapeno, after shallot is transparent add a diced tomato.
Cover and cook for a while, then add chicken and chopped mushrooms,
white wine, and, the big change, maple syrup. When the chicken's done
remove and reduce sauce over high flame, spoon over chicken and serve.
Yum.
