Response:
No account of Muslim and Christians in the Middle Ages would be complete without
hearing from the Muslims. I recommend:
Albert Hourani, _A History of the Arab Peoples_, Originally published by Harvard
University Press, now available in paper back from Warner Books, 1991. Look at
pp. 96ff and 186ff, but much of the rest should be read.
Amin Maalouf, _The Crusades Through Arab Eyes_ Originally published in French,
now available in paperback for Schocken Books 1984. There are allegations that
the Crusaders engaged in cannibalism on two occasions. These allegations and
the Christian and Muslim reactions would make a good paper in themselves.
