You can either do this with my Yaim system, with the variable
to explicitly set which nodes run GSIFTP
DCACHE_DOOR_GSIFTP="pool_node1 pool_node2"
combined with
RESET_DCACHE_CONFIGURATION=yes
which should just then reconfigure the configuration files.
If you don't use my Yaim for configuration you can simply change the files directly with version 1.6.6 not sure about earlier versions any more though
/opt/d-cache/etc/node_config
is the file you need to edit it contains the key
GRIDFTP=
which takes the values "yes" / "no"
then restart D-Cache
