Hi Luciano
There is a problem here with your request for something with "phonemic transcriptions for actual NZ and SAf pronunciations" (emphasis added), since phonemic implies underlying categories rather than actual realisations. For that reason, you will find that NZ dictionaries, which if they have a transcription at all will tend to have *phonemic* transcriptions are not going to be vastly different from, say, RP dictionaries. They might indicate the merger of NEAR and SQUARE, but probably not, since this is more consistent for younger speakers, and older speakers tend not to merge. They might indicate qualitative overlap of STRUT and START, but probably not, since there is still a phonemic distinction (in length now rather than quality). And so on.
It is the *phonetic* detail that is important, rather than the phonemic categories, and dictionaries tend not to give the sort of detail I suspect you want. You are better off looking at descriptions of the phonetics of NZE such as Bauer and Warren in the Mouton Varieties of English volume (ed. B Kortmann and others, published 2005), which also includes a Warren and Bauer chapter on Maori English. We also have a JIPA description of the pronunciation NZE that is under review.
