Why not continue to use your existing web address of
http://www.ashmol.ox.ac.uk/? That way you preserve your Google-rank and any
links pointing at your site.
If you can't do that for whatever reason, then .org.uk is probably your best
bet - expresses that you're both an organisation and in the UK (which I
think helps you appear in the google.co.uk "pages from the UK" search
results).
By all means register variations on your domain name, but make sure that
they return the 301 Permanent Redirect HTTP code redirecting people to your
standard website URL - that way search engines will only index your site at
the definitive URL.
