Hi Carolyn,
the 128s cut-off plot is the default, which (in SPM2) is hard-coded into
the function spm_fMRI_design_show.m
There (in spm_fMRI_design_show.m around line 83, search for the line
containing 'subplot(2,2,2)') you'll find the code for the frequency plot.
See if you can take it from there and make the adjustments you need.
