Hello David Moore,
I found that the book "Eye tracking methodology - Theory and practice" by Andrew Duchowski (Springer, 2003) has a very good balance between the physiological, psychological and technical basis of eye-tracking. Getting support for "hands-on" experience would depend on the facilities and the teachers of your university. If you plan to use a specific eye tracker model, perhaps can you check with the manufacturer wether they will provide training.

Hi, my name is David Moore and I've just started a PhD which i hope will
include the use of eye tracking however I am finding understanding the
technology difficult and would like to know if anybody is aware of any courses
available to learn these skills.
