I was wondering how long it'd take someone to mention the ICAZ volume!
Unfortunately I haven't got access to it just yet, but it's on my
Christmas list.
Anyway, thanks again to everyone who's got back to me with suggestions -
an incredibly comprehensive response!
David

David, it seems that noone has mentioned a rather fascinating volume
just out....which has more papers on milk, fats and lipids than you can
milkshake a stick at i.e latest ICAZ offering : The Zooarchaeology of
Fats, Oils, Milk and Dairying (Proceedings of the 9th ICAZ Conference),
J. Mulville, A. Outram, Oxbow Books.
List of papers below.
and
Craig, O.E., Taylor, G. Mulville, J. Collins M.J. and Parker Pearson
M.The identification of prehistoric dairying activities in the Western
Isles of Scotland: an integrated biomolecular approach. Journal of
Archaeological Science, 32, 1, 91-103.
